Meatless Journey

Looking back over some posts I have pieced together our (husband and I) journey to not having meat in our daily eating habits anymore. We both thought it had been about 2 years, and we are correct. In July of 2009 dead animals were officially out of our refrigerator. It took a few months of transition, from December to July slowing taking chances on new things like tofu and roasted vegetables and ‘fake’ meats it finally took hold. Now, July of 2011 it has been 2 years (I did have meat in Mexico and Germany, so I’m not 100% at the 2 year mark). I have no desire for meats of any kind anymore. It’s gone. I desire the crispy fried edges and the meaty gravy….so I crispy fry tofu, vegetables, potatoes, and for gravy I make mushroom with savory herbs with miso and it’s amazing!!! I love this life and the variety of things we can choose to eat. I’ll keep exploring and the journey goes on, and on and on:)
