Ok, I had a couple of hours before going to work to get my dinner ready. I work nights and the forecast called for freezing rain. That meant that leaving work to get food during my 12 hour shift was probably not going to happen.
I decided to make some quick sweet potato curry. The reason I put “genius or crazzzzy” in the title will be revealed when you see the ingredients list.
- 1 medium sweet potato peeled and cut into 1 inch pieces
- 1 can of stewed tomatoes
- 1 T. Patak’s curry paste
- Olive oil
- 1 small container of Activia strawberry yogurt (crazzzzy? genius?)
The thing is, I like creamy Korma type of curry. I have made it in the past with plain yogurt, coconut milk, and even just butter and milk and cream to get the creaminess I wanted. Tonight I had limited resources. An old can of opened coconut milk in the fridge, not an option. I’m trying to not eat or drink too too much dairy for a while, but I can’t help but think yogurt is good for me (could be brainwashed, who knows).
Therefore…I cooked the potatoes in a tiny bit of olive oil on medium until they got nicely browned all around, added in the tomatoes and the curry paste. after that cooked for a few minutes I just knew I needed the creamy factor. I looked in the fridge and made the bold move, Ahhh strawberry yogurt. Could be good, could be a disaster.
I did it quickly. I knew if my husband was around he would turn up his nose and try to talk me out of it, so I quickly tossed the yogurt in the pot, stirred and watched with wide open eyes.
I don’t know what I thought might happen, fire might shoot down from the recipe gods, sparks might fly from such a wrong combination of ingredients…but nothing, just bubbled and smelled fantastic. The combination of curry and strawberry was amazing.
I made some Jasmine rice, put that in a container, poured in the curry and went to work. I didn’t taste it, didn’t even lick the spoon for fear that it might be the worse thing I have ever put in my mouth (highly unlikely considering my early 20′s!).
At work, hungry, smelling meatballs cooking that tempt me away from my no-meat plan for the month. I heat up some of my rice and curry, sprinkle on a bit of salt..and voila!! It is delicous. I think it might be a bit better if I made more of it, or used half the yogurt. Only for one reason, the strawberry kind of overrides the good taste of the sweet potatoes, other than that it’s an excellent combination.
Next time I will use less yogurt, add some onions, and a bit more curry paste.
